You can set your technicians availability when you are creating/editing a technician.
- Scroll down to the availability section
- Fill out their availability for each day
- Make sure that the 'Available' box is checked on the right
- Techs cannot change their availability only an Admin/Manager can
- Techs can change their availability by requesting time off
